Armenian Green Beans

Ingredients

  • 2 tablespoons vegetable oil or butter
  • 2 cups chopped onions
  • 3 cups green beans, whole or cut in half
  • 4 medium fresh tomatoes, chopped
  • 3 tablespoons lemon juice
  • 1/4 teaspoon dried thyme (or 1 tablespoon fresh if available)
  • 1/4 teaspoon dried marjoram (or 1 tablespoon fresh if available)
  • 1/4 teaspoon dried basil (or 1 tablespoon fresh if available)
  • salt and black pepper to taste

Directions

Sauté the onions in the oil and butter until translucent.  Add the beans and cook about 5 minutes, stirring frequently, until they turn a bright, shiny green.  Stir in the tomatoes, lemon juice, herbs, and spices.  Lower the heat and simmer, covered, 10 to 15 minutes, until the beans are tender and the flavors have married.  Stir occasionally to prevent sticking.
