Middle Eastern Carrot Salad

Ingredients

  • 4 cups grated carrots
  • 3 tablespoons lemon juice
  • 3 tablespoons vegetable oil
  • 1/2 teaspoon ground coriander seeds
  • 1/4 teaspoon salt
  • 2 teaspoons chopped fresh mint (1/2 teaspoon dried)
  • 1 tablespoon chopped fresh parsley
  • 1 to 2 teaspoons honey, sugar, or maple syrup (optional)

Directions

Mix on the ingredients together and chill at least one hour before serving.
